Abstract

This study aimed to determine awareness, attitude, and willingness to purchase a variety of alternative nut butters among the consumers. Additionally, the research aims to gather data from the residents of Iligan City. Specifically, it seeks to evaluate the feasibility and market potential of alternative nut butters in terms of consumer awareness, consumers perception, product image, pricing, and willingness to buy. The quantitative research focused on alternative nut butter through a survey that suggests possible alternative nut butters from mango kernel, avocado, jackfruit, durian, rambutan, and mangosteen. The researchers utilized descriptive (frequency, percentage, mean, standard deviation) and inferential (ANOVA, correlation) statistical tools to analyze the data gathered from the survey. Based on the data gathered, avocado ranked 1st as the most preferred alternative nut butter with a percentage of 65.5%, the second most preferred nut butter alternative is the mango kernels butter 63%, and durian as the least preferred alternative nut butter among the six alternative nut butter with a percentage of 15.5%. Furthermore, looking for alternatives for nut butter help reduce the fruit kernel waste while also providing options for those individuals who have peanut allergies, looking for innovative, organic and healthy nut butter alternatives. The research also suggests that these nut butter alternatives may not only help the environment but can also contribute to the development of healthier food choices and create new opportunities for local food businesses and entrepreneurs in Iligan City.
